    Mix in a deep bowl mineral water, egg, salt, sugar and vegetable oil (refined).

    First add 3 cups of flour, mix with a spoon. Then gradually add more flour, kneading the dough with your hands. Quantity - based on the principle of “how much dough will take”, approximately 4 cups will be needed. Knead until the dough pulls away from the sides of the bowl, and then for another 5 minutes. Cover the finished dough with film and put it in the refrigerator for 20-30 minutes.

    Meanwhile, prepare the filling. Place the cottage cheese in a bowl and mash it with a fork so that there are no lumps. Grind the suluguni and cheese and mix them with cottage cheese. Add salt to taste and mix everything again until smooth.

    Divide the dough into 5-7 equal pieces (focus on the diameter of your frying pan, I used a small 20 cm frying pan, it turned out to be 7 khachapuri). We knead each part with our hands into a flat cake, put the filling in the center.

    We fasten the edges of the dough at the top to make a “bag”.

    Flatten it with your palm and knead it some more.

    Roll out a little using a rolling pin. The thinner the khachapuri is, the better it will bake, so the cakes should not be thicker than 1 cm.

    We bake lazy khachapuri in a frying pan. It should be well heated, no need to lubricate it with anything! Place the khachapuri in a dry frying pan and fry until cooked. The heat should be moderate so that the dough and filling are properly baked. Each side of the cake should be browned, and you should get these nice scorch marks on the surface.

    Grease hot cakes when ready butter and stack them on top of each other. To keep them hot longer, I recommend covering the top with a bowl or bag.

What is it and how to prepare it

The name comes from two Georgian words “khacha” - cheese and “puri” - bread or flatbread. In other words, the dish consists of cheese filling in dough.

  • Salt, herbs and pepper to taste.

To prepare the dish, it is better to use hard, Adyghe or Georgian suluguni cheese. For getting better taste You can mix different varieties.

You need to grate the cheese on a coarse grater, add sour cream, you can use kefir instead of sour cream. Add eggs, butter and mix. Sift flour into the resulting mixture, add salt and pepper to taste and stir thoroughly until smooth.

Then heat a frying pan with vegetable oil and quickly pour the resulting cheese dough onto it. Cover with a lid and fry over low heat for 3-5 minutes. Then turn over and fry on the other side, uncovered, over medium heat for several minutes until crispy.

Before serving, you can sprinkle quick khachapuri for breakfast with finely chopped dill and decorate the dish with lettuce leaves.

You need to pour the kefir into a bowl, break the eggs and add pre-chopped herbs. Add cheese, cottage cheese, spices and salt to taste to the resulting mixture. Mix thoroughly and add flour, previously sifted through a sieve. Stir until a homogeneous consistency is obtained.

Fry the resulting mixture over medium heat until golden brown on both sides.

Here are the two most simple recipes khachapuri for cooking a quick fix, which are suitable even for lazy people.

Cooking options

Let's look at how else you can diversify this dish.

  1. After frying the mixture with cheese in a frying pan on one side, you need to turn it over and sprinkle the khachapuri on top with finely chopped herbs. Then fold the flatbread in half and fry on both sides until golden brown. Then brush the crust with butter and serve with lettuce, tomatoes, peppers and cucumbers.
  2. This dish can be baked at home in the oven. This process will require a little more time. You need to preheat the oven to a temperature of 170 - 200 degrees. Grease a baking tray with butter and pour the mixture onto it, spreading it evenly over the surface. Bake for 15 - 20 minutes until an even golden crust forms.

If you have enough time, you can prepare the next dish.

Prepare the dough separately. Mix milk or kefir with salt and soda, add pre-melted butter to the kefir mixture. Add flour little by little, sifting it using a sieve, and mix everything thoroughly. The dough should be stretchy and viscous, but not stick to your hands.

Separately deal with the filling. Place the cottage cheese in a small bowl, mash it with a fork until smooth, without lumps. Grate the cheese and add sour cream. Mix all this until smooth, then add herbs, salt, pepper and spices to taste.

Divide the dough into two parts and roll out two identical round cakes on the table to a thickness of one centimeter. Quick khachapuri should not have a thicker crust, otherwise the flatbread will not be baked.

Place the curd and cheese filling in the center of the round juice and cover with a second flatbread on top. Bring the edges of both round pancakes together using your fingers. Flatbreads can be cooked either in a frying pan or in the oven, as described above.

Serving

Khachapuri is served on the table as with chicken broth or other soup, shish kebab, sausage or any meat snacks. The dish is also served separately with fresh herbs and spicy Caucasian sauces or adjika.

If the cheese you prepared for the filling is too salty, you need to pre-soak it for several hours. To do this, a large piece of cheese is cut into slices two centimeters thick;

Khachapuri should be made thin. The thinner it is, the better;

Finished products need to be greased with butter;

Prepare khachapuri in an oven preheated to 180-200 degrees for about 20 minutes. Make sure that the baked goods are not overly fried; they only need to be lightly browned;

Instead of classic cheese (Imereti, Suluguni), you can take not very salty cheese;

In the absence of matsoni, you can prepare it yourself. To do this, you need to heat 3 liters of milk, add two tablespoons of sour cream or kefir to it, close the lid, insulate and leave to mature. After two hours, the milk can be transferred to the refrigerator, where it can be stored until the mass thickens.
